Whenever I am craving meat, this is my go-to!

1. Begin by preparing the brisket. Trim any excess fat from the brisket, leaving about a quarter-inch layer for flavor.
2. In a small bowl, mix together the kosher salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and cayenne pepper.
3. Rub this spice mixture all over the brisket, making sure to coat it evenly. Let it sit for about an hour to absorb the flavors.
4. Preheat your grill to a low, indirect heat setting, around 225°F.
5. Place the brisket on the grill, fat side up, and close the lid. Cook it low and slow for about 6 to 8 hours, or until the internal temperature reaches 195°F.
6. Periodically baste the brisket with a mixture of barbecue sauce, apple cider vinegar, and beef broth to keep it moist and flavorful.
7. Once done, remove the brisket from the grill and let it rest for at least 30 minutes before slicing. This allows the juices to redistribute, making the meat tender and juicy.
Variations & Tips
For a sweeter twist, you can add a bit more brown sugar to your rub or choose a honey-based barbecue sauce. If you enjoy a bit more heat, don't hesitate to increase the cayenne pepper or add a few dashes of hot sauce to your basting mixture. For a more smoky flavor, you can add wood chips to your grill, such as hickory or applewood, to infuse the brisket with an additional layer of deliciousness.
