Very easy egg and rice recipe, especially for dinner!

Dice the onion and pepper. Grate the carrot and fry it in a pan with a little oil until golden brown.
Also add the crushed tomatoes and season with salt and pepper. Cover and cook for another 10 minutes.
In another bowl we put the boiled rice and grated hard-boiled eggs. Also we add finely chopped spring onions and spoons of mayonnaise. We mix very well.
With this mixture we fill all the pancakes. Break the pancake with a spoon and put it on the plate, then roll it up.
As a base we put half of the sauce in a baking dish. Then we serve the pancakes.
Cover the pancakes with the remaining sauce. Sprinkle with grated mozzarella.
Bake in a preheated oven at about 180°C for about 25-30 minutes. And that's it, that's all
