Vegetables from the oven

1️⃣ Vegetable preparation:
Wash the potatoes thoroughly and cut them in half. If you are using young potatoes, you do not need to peel them.
Cut the zucchini into slices of about 1 cm thick.
Peel the red onion and cut it into thick slices.
If you like, you can peel the garlic and cut it into slices.
2️⃣ Herbs:
Place all the vegetables on a baking sheet lined with baking paper.
Drizzle with olive oil and mix well, so that the vegetables are evenly coated.
Sprinkle with salt and pepper and add fresh sprigs of thyme.
3️⃣ Baking:
Preheat the oven to 200Β°C (top-bottom).
Place the vegetables in the oven and bake for about 30-40 minutes. Stir halfway through the baking time, so that they brown evenly.
🍽️ Serving:
Serve the vegetables directly from the baking sheet or place them on a platter.
They taste delicious as an addition to meat, fish or as a stand-alone dish with yoghurt dip.
