Directions
1. In a large bowl, combine the cooked black-eyed peas, red onion, red bell pepper, green bell pepper, cherry tomatoes, and parsley.
2. In a small bowl, whisk together the olive oil, apple cider vinegar, sugar, salt, and pepper until well combined.
3. Pour the dressing over the black-eyed pea mixture and toss gently to coat all the ingredients evenly.
4. Cover the salad and refrigerate for at least an hour to allow the flavors to meld together.
5. Before serving, give the salad a good stir and adjust the seasoning if needed.
Variations & Tips
