Directions:
Make the filling: Beat the cream cheese in a bowl until smooth. Stir in the sugar and vanilla until well combined. Gently fold in the chopped strawberries, lemon juice and cinnamon.
Assemble the quesadillas: Brush the tortillas with melted butter. Sprinkle the graham cracker crumbs over the buttered side. Spread the filling on the unbuttered side of two tortillas and cover with the other.
Cook the quesadillas: Heat a skillet over medium heat. Cook each quesadilla for 2 to 3 minutes on each side, until golden brown and crispy.
Serve: Allow to cool slightly, cut into quarters, and sprinkle with powdered sugar if desired. Enjoy warm!
