Spanakopita rolls: the Greek recipe for a delicious starter!

Heat 2 tablespoons of olive oil in a pan and fry the onion and garlic until soft.

Add the prepared spinach and fry for a few minutes. Then remove from the heat and let cool slightly.

Crumble the feta cheese and mix with the spinach. If you like, you can also add an egg to the mixture to make the filling a little firmer.

Season with salt, pepper and nutmeg.

Prepare the puff pastry:

Roll out the puff pastry and cut into even rectangles (approx. 10 x 10 cm, depending on the desired size).

Place a spoonful of the spinach and feta filling in the middle of each rectangle.

Form the rolls:

Fold the corners of the puff pastry over the filling to form small parcels. You can either simply fold the corners in or press the edges together a little to seal them.
Baking:

Place the rolls on a baking tray lined with baking paper and brush with egg yolk. If you like, you can also sprinkle sesame seeds on top.

Bake in a preheated oven at 180°C (top/bottom heat) for around 20-25 minutes until the rolls are golden brown and crispy.

Serving:
Serve the Spanakopita rolls warm - they are ideal as a starter or as a snack for parties. They go well with a fresh dip such as tzatziki or simply a green salad.
