1️⃣ Make the caramel:

In a medium saucepan, combine the sugar and water. Stir gently just to moisten the sugar.
Cook over medium heat without stirring until the mixture turns a deep amber color. Watch closely—caramel can burn quickly!
2️⃣ Add the cream carefully:

Remove from heat and slowly pour in the warm cream, stirring constantly. It will bubble vigorously, so be cautious.
3️⃣ Finish with butter:
Stir in the butter until smooth and glossy.
Add sea salt and vanilla extract if desired.
4️⃣ Cool and use:

Let the ganache cool slightly before using. It thickens as it cools—perfect for pouring, spreading, or dipping!
