Preheat the oven to 180 °C. Rinse the smoked pork roast well and pat it dry. Rub it with salt and pepper. Place the onions, carrots and potatoes in a large casserole dish. Heat the oil and fry the smoked pork roast on all sides until it has a golden brown crust. Place the seared smoked pork roast on top of the vegetables. Pour in the vegetable stock, bay leaves, peppercorns and mustard seeds. Drizzle the honey over the roast. Cover the baking dish with aluminum foil and cook the roast in the preheated oven for about 1.5 hours. After 1.5 hours, remove the foil and cook the roast uncovered for another 30 minutes until it is nice and crispy. Take the roast out of the oven, let it rest for a moment and then cut it into slices. Serve with the vegetables.
