Boil the potatoes: Peel the potatoes, cut them into pieces and boil them in salted water until they are cooked. Drain them and mash them with a potato masher or a fork until a smooth puree is formed.
To make the dough: In a large bowl, whisk together the mashed potatoes, flour, egg, grated cheese (if using), salt, yeast and herbs. Knead until the mixture is soft and slightly sticky. Add a little flour if necessary to achieve the desired consistency.
Shape the bread: Divide the dough into portions according to the desired loaf size. Shape each piece into a ball and flatten slightly to form disks.
Bake: Heat olive oil in a non-stick pan over medium heat. Bake the dough for about 3-4 minutes on each side, until golden brown and crispy on the outside.
Serve: Serve warm potato bread with cheese, cold cuts or a sauce of your choice.
