1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. In a bowl, combine the grated potatoes, zucchini, carrots, onions, garlic and parsley.
3. Add the flour, eggs, salt, pepper and paprika and mix well until evenly distributed.
4. Form small fritters with your hands and place on the prepared baking sheet.
5. Brush the vegetable fritters lightly with olive oil.
6. Bake in the preheated oven for 25-30 minutes until golden brown and crispy.
7. Remove from the oven and allow to cool slightly before serving.
8. Enjoy the vegetable fritters on their own or with a dipping sauce of your choice.
