1/2 teaspoon garlic powder
Salt and pepper to taste
Optional: dash of hot sauce
8 slices of sturdy bread
2 ripe avocados, sliced
Butter, for spreading
Directions
In a bowl, mix together the cheddar cheese, cream cheese, mayonnaise, chopped pimientos, garlic powder, salt, and pepper. Add a dash of hot sauce if desired.
Butter one side of each slice of bread.
Spread the pimiento cheese mixture on the non-buttered side of four slices of bread.
Place slices of ripe avocado on top of the cheese mixture.
Cover with the remaining bread slices, butter-side up.
Heat a skillet over medium heat and cook the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Serve immediately, sliced diagonally.
Variations & Tips
For a milder version, use Monterey Jack cheese instead of sharp cheddar. If you have picky eaters, you can omit the pimientos or substitute them with roasted red peppers for a different flavor. For a heartier sandwich, add slices of cooked bacon or turkey. To make it vegetarian, ensure the cheese and mayonnaise are vegetarian-friendly. You can also experiment with different types of bread, such as sourdough or whole grain, to suit your family's preferences.
