Preheat your oven to 375°F (190°C).
Roll out the biscuit dough into a large circle or rectangle to fit your pizza pan or baking sheet. Press the edges to form a crust.
Brown the sausage in a skillet over medium heat, breaking it up into small pieces as it cooks. Once fully cooked, remove the sausage and set aside, leaving the drippings in the skillet.
Add the flour to the skillet and stir to combine with the sausage drippings, cooking for about 1 minute.
Gradually whisk in the milk, stirring constantly until the gravy thickens, about 5-7 minutes. Season with black pepper and salt.
Spread the sausage gravy evenly over the biscuit crust.
Sprinkle the cooked sausage over the gravy, followed by the shredded cheddar cheese.
Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove from the oven and let cool slightly before slicing. Garnish with chopped green onions, if desired.

For a spicier version, add a pinch of red pepper flakes to the gravy or use spicy breakfast sausage. If you have picky eaters, you can make individual pizzas using smaller rounds of biscuit dough and customize the toppings. For a vegetarian option, substitute the sausage with sautéed mushrooms and onions. You can also add scrambled eggs on top for an extra breakfast touch.
