I made this dish for a hangout, and my friends couldn't get enough of it.

1. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.
2. Add the sliced onion to the skillet and sauté until translucent, about 3-4 minutes.
3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
4. Add the sliced cabbage to the skillet, stirring to coat it in the bacon grease. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender and slightly browned.
5. Season the cabbage with salt and pepper to taste. If desired, add a tablespoon of olive oil for extra richness or a tablespoon of apple cider vinegar for a tangy kick.
6. Return the crispy bacon to the skillet and stir to combine with the cabbage.
7. Serve hot, garnished with additional black pepper if desired.

For a smoky flavor, try using smoked bacon or adding a pinch of smoked paprika. You can also incorporate other vegetables like bell peppers or carrots for added color and nutrition. If you prefer a vegetarian version, omit the bacon and use olive oil or butter as the cooking fat, adding smoked paprika or liquid smoke for flavor. For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce. Experiment with different types of cabbage, such as Savoy or Napa, for varied textures and flavors.
