Making cheese at home is a rewarding and fun process that allows you to enjoy fresh, delicious cheese while customizing it to your taste. Homemade yellow cheese is creamy, flavorful, and adds a rich, savory touch to various dishes. By following this simple recipe, you can make your own cheese from the comfort of your kitchen.
Ingredients:
4 liters (1 gallon) of whole milk
1/4 tablet of rennet (or 1/4 teaspoon of liquid rennet)
1/4 cup white vinegar or lemon juice
1/4 cup non-iodized salt (like kosher salt)
1/2 teaspoon of yellow cheese coloring (optional, for a deep yellow color)
1/4 cup water (for dissolving the rennet)
Directions:
Prepare the Milk: Pour the whole milk into a large pot. Slowly heat the milk over medium heat, stirring occasionally, until it reaches about 32°C (90°F). Be sure not to boil the milk, as this can interfere with the curdling process.
Dissolve the Rennet: In a small bowl, dissolve the rennet in the 1/4 cup of water. Stir gently and set aside for later use.
Acidify the Milk: Once the milk has reached the desired temperature, add the vinegar or lemon juice to the milk and stir well. This will help acidify the milk, encouraging curd formation.
Add the Rennet: Pour the dissolved rennet into the milk and stir gently. Allow the milk to sit undisturbed for about 45 minutes to an hour. You’ll know it's ready when the milk has thickened into curds, and the whey (the liquid portion) begins to separate.
Cut the Curd: Using a long knife, cut the curd into small cubes. Let it sit for another 5 minutes.
