1. Prepare the rice by rinsing it in a sieve under cold water until the water runs clear. Drain.
2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent. Then add the garlic and fry for another minute. Add the diced peppers and tomatoes and mix well. Let the vegetables cook for 5 minutes until soft.
3. Sprinkle paprika, cumin, salt and pepper into the pot and stir well. Then add the drained rice and mix everything so that the rice is covered with the spices and vegetables. Pour in the vegetable stock and bring everything to the boil. Cover the pot, reduce the heat and let the rice simmer for 15-20 minutes until the liquid is absorbed and the rice is cooked.
4. Fluff the rice with a fork and garnish with fresh parsley. Serve the Djuvec rice warm, ideal as a side dish or main course.
