First wash the carrots and use a peeler to peel them lengthways into thin slices. Then put the carrot slices in boiling water for 5 minutes. The slices must not become mushy.
After the carrots are soft, drain well and place in an airtight jar. Add all other ingredients & shake gently to mix everything together. Place the jar in the fridge for at least 2 hours. Best served with fresh bread, almond cream cheese, capers & dill. Enjoy!
