Prepare the Puff Pastry:
Thaw the puff pastry according to the package directions.
Preheat your oven according to the puff pastry package directions, generally around 375-400°F (190-200°C).
Line a baking sheet with parchment paper.
Lightly flour a clean surface.
Unfold the puff pastry sheets.
Shape the “Bagels”:
Using a round cookie cutter or a glass, cut out circles from the puff pastry.
Then, using a smaller round cutter or the end of a pastry tip, cut out the center of each circle to create a ring shape.
You can also layer a couple of rings on top of each other to make them a little thicker.
Egg Wash and Toppings:
Brush the “bagels” with the beaten egg. This will help them turn golden brown and help toppings adhere.
Sprinkle your chosen toppings over the egg-washed pastries.
Bake:
Place the baking sheet in the preheated oven and bake according to the package instructions, or until the pastries are golden brown and puffed. This usually takes about 15-20 minutes.
Keep a close eye on them, as puff pastry can burn quickly.
Cool and Serve:
Remove the baking sheet from the oven and let the pastries cool slightly before serving.
Important Considerations:

Texture: These will be flaky and buttery, not chewy like traditional bagels.
Toppings: “Everything bagel” seasoning works great, but feel free to experiment with other flavors.
Variations:
You can add cheese or herbs to the puff pastry before cutting out the shapes.
For a sweeter version, brush with melted butter and sprinkle with cinnamon sugar.
