Directions:
Wash the Brussels sprouts and cut off the ends.
Blanch the Brussels sprouts in a large pan of boiling, salted water for 3-4 minutes. Drain and set aside.
Melt the butter in a large frying pan and fry the onion and garlic until translucent.
Add the Brussels sprouts to the pan and fry for a few minutes until lightly browned.
Pour in the thick crème fraîche, add the nutmeg, salt and pepper to taste.
Simmer over low heat for 5-7 minutes, until cream thickens slightly.
Serve warm and garnish with chopped fresh parsley if desired.
