Step 1: Prepare the raspberry foam
Put the fresh raspberries in a bowl. Add the sugar, lemon juice and vanilla extract. Mix everything well and leave to stand for 10 minutes to allow the flavors to develop.
Step 2: Prepare the mascarpone cream
In a separate bowl, mix the mascarpone with the icing sugar and vanilla extract until smooth. In another bowl, whip the whipped cream until stiff and carefully fold it into the mascarpone mixture until everything is well combined.
Step 3: Assemble the dessert
In glasses or dessert bowls, alternate layers of raspberry mixture and mascarpone cream. Finish with a layer of raspberries. Garnish with fresh mint leaves and refrigerate for at least 1 hour before serving.
