In a large saucepan, heat the olive oil and sauté the thinly sliced ​​onions over medium heat until soft and slightly caramelized, about 10 minutes.
Add balsamic vinegar and brown sugar and stir well until sugar dissolves.
Add dried thyme, salt and pepper and mix well.
Reduce heat and simmer mixture over low heat for 30 to 40 minutes until liquid thickens.
Ladle jam into clean, sterilized jars and seal immediately.
Let cool and store in the refrigerator.
