Strawberry Cheesecake Rolls

Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
In a large bowl, mix the flour, sugar, baking powder, bicarbonate of soda and salt.
Add the cold butter and work it with your fingertips until it has a sandy texture.
Pour in the milk and vanilla extract, then mix until the dough comes together. Do not overwork the dough.
Roll out the dough on a lightly floured surface to form a rectangle about 30 x 20 cm.
Prepare the cheesecake filling:

Whisk the cream cheese with the icing sugar and vanilla extract until smooth.
Whip the whipping cream and gently fold it into the cream cheese mixture.
Add the chopped strawberries and mix gently.
Assemble the rolls:

Spread the cheesecake filling evenly over the rolled out dough.
Roll the dough tightly to form a log.
Cut the roll into 2 to 3 cm thick slices and arrange them on the baking tray.
Cooking:

Bake for 15 to 20 minutes, or until the rolls are lightly browned.
Serving:

Let cool slightly before serving.
