Spicy Beef Eggplant Rolls

1. Prepare the eggplants:

Preheat the oven to 200°C (390°F).

Cut the eggplants into 1 cm thick slices lengthwise.

Arrange the slices on a baking sheet lined with parchment paper, brush with olive oil, then season with salt and pepper.

Bake the eggplants in the oven for 20 minutes, until tender and lightly browned. Let cool slightly.

2. Prepare the spicy beef stuffing:

In a large frying pan, heat a little olive oil over medium heat.

Add the onion and garlic, then cook until soft and translucent.

Add the ground beef and cook until golden brown.

Stir in the chopped tomato, tomato paste, cumin, paprika, and cinnamon. Mix well and simmer for about 10 minutes, until the mixture is nicely spiced and fragrant. Season with salt and pepper to taste.

Remove the pan from the heat and stir in the chopped fresh parsley.

3. Assemble the rolls:

On each eggplant slice, place a tablespoon of beef filling and gently roll the eggplant around the filling.

Arrange the rolls in a lightly oiled baking dish.

4. Final cooking:

If desired, sprinkle the eggplant rolls with a little grated cheese.

Bake the rolls in the oven for 15 to 20 minutes, until the tops are lightly browned and the eggplants are cooked through.

5. Serve:

Serve hot, with a green salad or rice for a complete meal.
