Preparing the sauce: In a small bowl, mix the tomato puree with a pinch of salt and high-quality olive oil. Make sure to obtain a uniform mixture.
Preparing the first sheet of puff pastry: Unfold one sheet of puff pastry on a flat surface and spread half of the tomato puree mixture on top. Sprinkle generously with oregano leaves and evenly distribute the Parmesan cheese.
Folding and cooling: Fold the puff pastry over itself, pressing gently to seal. Cut into squares and refrigerate for 10 minutes.
Second Puff Pastry Sheet Preparation: Repeat with second puff pastry sheet, this time filling with cheese and salami slices. Fold and cut into squares and refrigerate for 10 minutes.
Baking Sheet Assembly: Place both sets of squares on a parchment-lined baking sheet. Brush with beaten egg yolk and olive oil.
Seed Finishing Touch: Sprinkle poppy seeds over tomato squares and sesame seeds over cheese and salami squares.
Perfect Bake: Transfer baking sheet to preheated 180°C/360°F oven and bake for 25 minutes, or until golden brown and crispy.
