1. Peel the potatoes, cut them into pieces, cook them and wait for them to boil before preparing the mash.
2. Make the mashed potatoes, add half the butter and 2 egg yolks. Once mixed, place it in the refrigerator for an hour and a half.
3. Once the mash is out of the refrigerator, place the flour on a plate, the breadcrumbs on another and finally beat 3 eggs and place on a plate.
4. Put a spoonful of mash in your hands and start forming balls. Once formed, pass them in the flour, then in the beaten eggs and finally in the breadcrumbs and do the same with the rest of the balls.
5. Put a lot of oil in a pan and wait until it is hot to add the balls and wait for them to cook.
