Hydrating the gelatin: Follow the package instructions to hydrate the gelatin in a little cold water.
Mix the dry ingredients: In a bowl, mix the crushed cookies and sugar.
Prepare the wet mixture: In another bowl, mix the milk, condensed milk, mascarpone cheese, vanilla essence and hydrated gelatin. Beat well until you obtain a homogeneous cream.
Combine the two mixtures: Add the wet mixture to the cookie mixture and mix until you have a uniform dough.

Assembling the cake: Pour the mixture into a rectangular or round pan and refrigerate for at least 4 hours, or until firm.
Decorate and serve: Unmold the cake and decorate with fresh fruit cut into small pieces.
Tips:

Cookies: You can use chocolate or vanilla cookies depending on your preference.
Mascarpone cheese: If you can’t find mascarpone cheese, you can substitute cream cheese.
Gelatin: Gelatin will give your cake a firmer texture.
Decoration: In addition to fruit, you can decorate the cake with grated chocolate, grated coconut or chopped nuts.
And that’s it! Now you have a delicious no-bake Italian cake to enjoy anytime.
