Begin with the Beef
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef and diced onions until the beef is browned and the onions are translucent. Be sure to drain any excess grease.
Sprinkle the taco seasoning mix over your beef and onion mixture. Stir well to ensure that the meat is evenly seasoned. Remove it from the heat and set it aside.
Layering Time
In a large baking dish, start your layering with a tortilla. Spread a thin layer of the refried beans over the tortilla, followed by a sprinkling of prepared rice, a portion of the beef mixture, some of the Mexican corn mix, and a generous sprinkle of shredded cheddar cheese. Don’t forget to drizzle some of the chunky salsa over the top.
Repeat this layering process until you’ve used all your ingredients, ensuring you finish with a final layer of cheese on top.
Bake to Perfection
Slide your casserole dish into the oven and bake for about 20-25 minutes or until the cheese on top is bubbly and golden.
Serve & Enjoy
Once out of the oven, let it sit for a few minutes to set. Then, slice up your casserole and serve it hot. A dollop of sour cream or a sprinkle of fresh cilantro complements this dish beautifully!
