Mediterranean Chicken with Lemons and Olives

Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 lemon, zested and juiced
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and black pepper, to taste
1 cup Kalamata olives, pitted and halved 🫒
1/2 cup cherry tomatoes, halved 🍅
1/2 cup chicken broth (or white wine for extra flavor)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
1. Season the Chicken:
In a small bowl, mix together the dried oregano, garlic powder, salt, and black pepper.
Rub the seasoning mixture evenly over both sides of the chicken breasts.
2. Sear the Chicken:
Heat the olive oil in a large skillet over medium heat.
Add the chicken breasts and sear for 4-5 minutes per side, or until golden brown. Remove the chicken and set aside.
