Crispy Shrimp Fritters Ingredients:

In a bowl, mix together the flour, cornflour, baking powder, salt, pepper and paprika.
Gradually add the lightly beaten egg and iced sparkling water. Mix gently until you have a smooth, thick batter.
Heat the vegetable oil in a large frying pan or deep fat fryer to 180°C.
Dip each shrimp into the batter, making sure it is well coated.
Fry the coated shrimp in hot oil in batches to prevent them from sticking together. Cook for about 2-3 minutes until golden and crispy.
Remove the fritters with a slotted spoon and place on kitchen paper to drain off excess oil.
Serve the crispy shrimp fritters hot, accompanied by lemon wedges and garnished with fresh parsley.
