Creamy Avocado Grilled Cheese

1. Prepare the avocado:

Cut the avocado in half, remove the pit and skin.
Mash the avocado in a bowl with a fork. Add the lemon juice, salt and pepper to taste. For a spicier version, add a pinch of chili flakes.

2. Assemble the sandwich:

Butter one side of each slice of bread. This side will be on the outside when cooking to obtain a golden and crispy exterior.
On the unbuttered side of two slices, spread the avocado puree.
Add the grated cheese evenly on the avocado.
Close the sandwich with the other slices of bread (buttered side out).

3. Cook the grilled cheese:

Heat a frying pan over medium heat.
Place the sandwiches in the hot pan. Cook for about 3 to 4 minutes on each side, or until the bread is golden and crispy, and the cheese is melted.
Press lightly with a spatula so that the sandwich is compact and the cheese melts evenly.

4. Serve:

Remove the sandwiches from the pan once they are golden brown on both sides.
Slice diagonally for a classic presentation and serve immediately.
