Chicken Parmesan with Pesto

1. Prepare the Chicken:
Split the chicken breasts in half horizontally, like a book. In a small bowl, combine the bread crumbs, Parmesan cheese, paprika, dried basil, garlic powder, salt and pepper. Dip each piece of chicken into the breadcrumb mixture, coating both sides completely.

2. Cook the Chicken:
Heat a large skillet over medium heat, then add the olive oil and butter. Once the skillet is hot, add the coated chicken breasts. Cook for about 3 to 4 minutes on each side, until both sides are golden brown and the chicken is cooked through (internal temperature: 75°C or 165°F).

3. Add the Toppings:
Reduce the heat to low. Spread the pesto sauce over each chicken breast, then place a slice of mozzarella on top of each piece. Sprinkle with chopped sun-dried tomatoes. Cover the skillet and let the cheese melt and bubble over the chicken.

4. Serve:
Once the cheese is melted and everything is heated through, remove the chicken breasts from the skillet. Serve your Chicken Parmesan with Pesto with cooked pasta, a fresh salad or your favorite sides.
