Preheat oven to 400°F.
Add ground chicken to a large bowl and mix with egg, mayonnaise, ¼ cup breadcrumbs, minced onion, garlic powder, dried parsley, salt and pepper.
Spray a 9″ x 5″ loaf pan with cooking spray and add half of the chicken mixture to the bottom of the pan and spread it out to form an even layer.
Next layer on three slices of ham then three slices of cheese. Repeat with another layer of ham and cheese.
Top meatloaf with remaining chicken, spreading the layer evenly.
Bake for 25 minutes, then remove from oven and carefully sprinkle with breadcrumbs.
Return meatloaf to oven for 15 minutes, uncovering with foil halfway through if breadcrumbs start to brown.
To make gravy, add butter to a saucepan over medium heat.
Once melted, whisk in flour and cook for one minute.
Then add cream, milk, Worcestershire sauce and Dijon mustard.
Whisk to combine and simmer to thicken.
After 3-4 minutes, add parmesan cheese and nutmeg, whisk to combine and taste for seasonings.
Add salt and pepper to taste.
Let meatloaf rest for 10 minutes in pan after removing from oven, then carefully remove pan and slice
Serve with gravy on top.
