Vegan Grilled Cheese Sandwich Recipe

In a small bowl, mix together the shredded vegan cheese with the nutritional yeast (if using), garlic powder, onion powder, salt, and black pepper. This seasoning mix will enhance the cheesy flavor of the sandwich.
Lay 4 slices of bread on a clean surface. Spread a thin layer of vegan butter on one side of each slice.
Flip two slices of bread over, so the buttered side is facing down. On each slice, add a generous amount of seasoned vegan cheese.
If desired, add sliced ​​tomatoes or a spread of vegan pesto or mustard on top of the cheese.
Place the remaining two slices of bread on top of the cheese and other toppings, buttered side up.
Preheat a non-stick skillet or griddle over medium heat.
Once the skillet is hot, carefully transfer the assembled sandwiches to the skillet.
Cook the sandwiches for about 3-4 minutes on each side or until the bread is golden and crispy and the cheese inside is melted and gooey.
To ensure even melting of the cheese, you can cover the skillet with a lid while cooking, trapping the heat in to melt the cheese.
Once both sides are perfectly toasted, remove the sandwiches from the skillet.
Let the vegan grilled cheese sandwich cool for a minute before slicing and serving.
