1 cup rice (preferably arborio or short grain rice)
4 cups whole milk
½ cup sugar
1 teaspoon vanilla extract
½ teaspoon ground cinnamon (optional)
Pinch of salt
Instructions:
Cook the rice:
Rinse the rice under cold water and place in a large saucepan.
Add the milk, sugar, and a pinch of salt. Stir to combine.
To simmer:
Bring the mixture to a boil over medium heat, then reduce the heat and simmer, stirring frequently, for about 20-25 minutes, or until the rice is tender and the mixture has reached a creamy consistency.
