Heat the olive oil in a large skillet over medium heat.
Add the sliced kielbasa and cook until browned on both sides, about 5 minutes. Remove kielbasa and set aside.
In the same skillet, add the chopped onion and cook until soft, about 2-3 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the chopped cabbage and diced potatoes, then sprinkle with paprika, salt, and pepper.
Pour in the chicken broth or water and bring to a simmer.
Cover the skillet and let it cook for about 15-20 minutes, or until the potatoes are tender.
Return the kielbasa to the skillet and cook for another 5 minutes until everything is heated through.
Serve hot, garnished with fresh parsley.
Variations & Tips
For those who like a bit of a kick, adding a dash of red pepper flakes can spice things up. If you’re looking for a lower-carb option, try substituting the potatoes with chunks of turnip or radishes. Vegetarians might enjoy this skillet with a plant-based sausage alternative and vegetable broth instead of chicken broth.
