How to make almond paste cookies
In a bowl, collect the almonds, add the caster sugar (1) and mix everything with a kitchen mixer until you get a very fine powder.
Flavor with the grated lemon zest (2).
Add the egg whites (3) and mix everything until smooth.
Grease your hands with a little oil, take small amounts of dough (about 30 grams) and form small almond balls (4).
Put the almond balls in the caster sugar (5) and let them rest in the refrigerator for about 2 hours.
Once the resting time is over, place the small almond balls on a baking sheet covered with a sheet of baking paper and “pinch” them with your fingers, giving them the characteristic shape (6). Bake at 180°C for about 12 minutes.
Remove the marzipan cookies from the oven and let them cool. Sprinkle with a little powdered sugar and serve (7).
