2 tablespoons vegetable oil
1 red bell pepper, sliced
1 cup broccoli florets
1 cup sliced carrots
3 green onions, chopped
2 cloves garlic, minced
Salt and pepper to taste
Directions
Cook the lo mein noodles according to package instructions. Drain and set aside.
In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce. Set aside to marinate briefly.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and sauté until cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the sliced bell pepper, broccoli, and carrots. Stir-fry the vegetables for 3-5 minutes until they begin to soften.
Return the cooked chicken to the skillet, along with the cooked noodles.
Add the remaining soy sauce, oyster sauce, and sesame oil. Toss everything to combine and heat through.
Season with salt and pepper to taste, then garnish with chopped green onions.
Serve hot and enjoy your homemade chicken lo mein.
Variations & Tips
For a vegetarian version, simply omit the chicken and add tofu or additional vegetables like mushrooms or snap peas. You can also replace lo mein noodles with spaghetti or rice noodles for a different texture. For an added kick, consider drizzling some sriracha or chili oil over the finished dish. Finally, feel free to experiment with other proteins such as shrimp or beef to suit your preferences.
