1. In a large saucepan, heat a little olive oil over medium heat.
2. Add the onion and garlic, and sautΓ© until golden and fragrant.
3. Add the ground beef to the pot and cook until golden brown and crumbly.
4. Stir in the chopped carrots and celery and cook for a few more minutes.
5. Pour the red wine into the pot and simmer until reduced by half.
6. Add the canned crushed tomatoes, tomato paste, bay leaves, oregano, basil, salt and pepper.
7. Reduce the heat and simmer over low heat for at least 1 hour, stirring occasionally.
8. Taste and adjust the seasoning if necessary.
9. Serve the Bolognese sauce over al dente pasta and sprinkle with grated cheese. Enjoy!
