Steak Bites with Mac N Cheese

Ingredients
For the Steak Bites:
2 NY Strip steaks, cut into 1/4–1/2 inch cubes
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 tablespoon Lite Creole Seasoning (such as Tony Chachere’s)
Avocado oil (as a binder)
For the Mac and Cheese:
16 oz pasta of choice (elbow, penne, or shells work well)
Pinch of kosher salt (for boiling water)
2/3 stick unsalted butter
1/3 cup all-purpose flour
3–4 cups lukewarm whole milk
2 slices pepper jack cheese
8 oz each: shredded Gouda, Gruyere, sharp cheddar, and mozzarella cheeses
1 1/2 cups reserved shredded cheese mixture
Instructions
Step 1: Prepare the Steak Bites
Cut the steaks into 1/4–1/2 inch cubes.
Place the steak cubes in a bowl and season with smoked paprika, garlic powder, onion powder, and Creole seasoning.
Drizzle with avocado oil and mix until the steak is evenly coated.
Cover and refrigerate while you prepare the mac and cheese.
Step 2: Cook the Pasta
Bring a large pot of water to a boil and add a pinch of kosher salt.
Add the pasta and cook for 10–12 minutes, or until al dente.
Drain the pasta and set it aside.
Step 3: Make the Cheese Sauce
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour to create a roux, cooking for 1–2 minutes while whisking constantly.
Stir in the same seasoning blend used for the steak bites to add extra flavor to the sauce.
Gradually whisk in lukewarm milk, a little at a time, until the mixture is smooth.
Continue stirring until the sauce thickens.
