Preheat your oven to 400°F (200°C) and grease a small baking dish or cast-iron skillet.
In a medium bowl, combine the cornmeal, buttermilk, and egg. Mix until just combined.
Pour the batter into the prepared dish and smooth the top with a spatula.
Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow to cool slightly before slicing and serving.
Variations & Tips
For a sweeter cornbread, add 2 tablespoons of sugar or honey to the batter. If you prefer a more savory version, consider adding a pinch of salt and a handful of shredded cheese or chopped jalapeños.
