1-In a salad bowl, mix the flour, a pinch of salt and the butter with your fingertips until you have a sandy texture.
2-Add the egg yolk and continue mixing. Make a ball with the dough, wrap in cling film and place in the refrigerator for 1 hour.
3-Then, roll out the dough using a rolling pin and place it on a pie dish. Pierce the bottom with a fork, refrigerate for 15 minutes, then bake in a preheated oven at 180°C for 10 minutes.
4-In a hot frying pan, add a dash of olive oil and brown the onion and garlic.
5-Add the shrimp and sauté quickly. Season with salt and lemon juice, then set aside.
6-In a salad bowl, beat the eggs with the cream. Add the grated cheese, salt, nutmeg and chopped parsley.
7-Add the sautéed shrimp and place the mixture on the already cooked tart base.
8-Return to a preheated oven at 200°C for 30 minutes.
