Recipe for Bread and Ham Dumplings
Ingredients:
400 g stale bread (baguette or white bread)
200 g ham or bacon, cut into small cubes
1 medium onion
2 tablespoons chopped fresh parsley
3 eggs
250 ml milk
Salt and pepper to taste
Grated nutmeg (optional)
Butter for cooking (optional)
Equipment:
Cling film (or clean tea towel)
Cling string
Preparation:
1. Preparation of ingredients:
Cut the stale bread into small cubes (about 1 cm on each side).
Brown the ham or bacon cubes in a frying pan without adding any fat. When they are golden, remove them from the heat.
Finely chop the onion and brown it in the same frying pan until it becomes translucent. Leave to cool.
2. Making the dough:
In a large bowl, mix the diced bread, ham (or bacon), cooked onions and chopped parsley.
In another bowl, beat the eggs and add the milk. Season with salt, pepper and a little grated nutmeg (if using).
Pour the egg-milk mixture over the bread and mix well so that all the bread is soaked. Let it sit for about 10 minutes so that the bread absorbs the liquid.
