Quick, Easy, and Delicious Sausage Noodles

Cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain the noodles, reserving about 1/2 cup of pasta water for later.

Cook the sausage: While the noodles cook, heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon if using crumbled sausage, or browning the slices until fully cooked (about 5–7 minutes).

Sauté the onion and garlic: Add the chopped onion to the skillet with the sausage and cook for about 3 minutes until softened. Add the minced garlic and cook for another 30 seconds, until fragrant.

Make the sauce: Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese (if using), and cook for 2–3 minutes until the sauce thickens. Season with salt and pepper to taste. If the sauce gets too thick, add a little bit of the reserved pasta water to reach the desired consistency.

Combine pasta and sausage mixture: Add the cooked noodles to the skillet with the sausage and cream sauce. Toss everything together to combine and coat the noodles in the sauce.

Serve: Serve hot, garnished with fresh parsley or basil if desired.

Tips:
For extra veggies, you can add spinach, bell peppers, or mushrooms to the skillet while sautéing the onions and garlic.
Use a different type of cheese like mozzarella or cheddar for a different flavor profile.
