In a large skillet, heat the butter or coconut oil over medium heat. Let it melt and coat the bottom of the pan.
Cook the Bananas:
Add the banana slices to the skillet in a single layer. Cook them for 2-3 minutes on each side, until golden brown and caramelized. Be careful not to overcrowd the pan; you may need to cook in batches depending on the size of your skillet.
Add the Sugar and Cinnamon:
Sprinkle the cinnamon and a pinch of salt over the bananas while they’re cooking. If using brown sugar, add it at this stage for a little caramelization. Stir gently to coat the bananas.
Finish:
Once the bananas are golden and caramelized, remove them from the pan. If desired, drizzle with a little vanilla extract for extra flavor.
Serve:
Serve the pan-fried cinnamon bananas warm, either on their own or with a scoop of vanilla ice cream, yogurt, or pancakes. You can also top with chopped nuts or a drizzle of honey for added texture and sweetness.
