Prepare the Potatoes: Wash the potatoes thoroughly and dry them. Pierce each potato a few times with a fork. Rub them with olive oil and sprinkle with salt and pepper.
Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the skins are crisp and the inside is soft. You can test doneness by inserting a fork into the center of the potatoes.
Prepare the Filling: While the potatoes are baking, prepare your filling. In a bowl, mix the sour cream (or Greek yogurt), shredded cheese, crumbled bacon, green onions, cooked chicken or sausage (if using), butter, milk, garlic powder, and any additional spices you like. Stir until smooth and creamy. Taste and adjust seasoning if needed.
Scoop and Stuff: Once the potatoes are baked and cool enough to handle, slice them in half lengthwise. Scoop out the flesh carefully, leaving a bit around the edges to maintain the potato skin. Place the scooped potato flesh in a bowl and mash it with a fork or potato masher. Mix in your filling mixture until smooth and well combined.
Stuff the Potatoes: Spoon the filling back into the potato skins, mounding it slightly on top.
Oven-Fry: Place the stuffed potatoes on a baking sheet and bake them at 400°F (200°C) for an additional 15-20 minutes, or until the tops are golden and slightly crispy.
Garnish and Serve: Garnish with fresh herbs like chives or parsley before serving. You can also add extra cheese or bacon bits on top for an extra indulgent touch.
