METHOD
Place the salmon escalope on a cutting board and clean it. Cut one side and roll it up. Tie with kitchen twine.
In a small bowl, add the orange (juice), honey, soy sauce and red chilli flakes and mix.
Pour the olive oil into the baking pan lined with baking paper and place the salmon escalopes on top. Add the prepared marinade and place a slice of orange on each piece.

Add the figs with rosemary and place in the oven. Bake at 190°C for 20 minutes.
Peel the orange and cut it into slices. Mix the cornstarch with the water to prepare later.

Mix the butter, rosemary, sugar, salt and red pepper flakes in a saucepan. Finally, add the cornstarch and stir until thickened.
Add a few tablespoons of sauce and place a piece of salmon on top.
