No-Bake Strawberry Shortcake: Perfect for Summer

Wash the strawberries and set aside a few whole ones for decoration. Hull and cut the rest of the strawberries into pieces, place them in a salad bowl with a sachet of vanilla sugar. Set aside.

Prepare the syrup, in a small saucepan mix the water and sugar and bring to the boil for 1 minute. Off the heat add 1 or 2 tablespoons of the juice from the cut strawberries. Leave to cool.

In a salad bowl whisk the Gervita with the second sachet of vanilla sugar and add the strawberries.

In the charlotte mold, place the sponge fingers lightly soaked in syrup in the bottom and around the mold. The biscuits should be soaked only on one side and very quickly, do not immerse them completely or they will become too soft.

Arrange a layer of Gervita and strawberries. Then a layer of biscuits. Finish with a layer of soaked biscuits.

Close the mold using the lid or a plate. Place a weight on top (such as a can or a milk bottle) and refrigerate for at least 5 hours.
