No-Bake Coconut Pecan Praline Cookies

Prepare the nuts: Roughly chop the pecans. You can also lightly toast them in a dry pan to intensify their flavor, but this is optional.

Melt the chocolate: Melt the chocolate together with the coconut oil in a small saucepan over low heat. Alternatively, you can melt the chocolate in the microwave in intervals.

Mix the ingredients: In a large bowl, mix together the shredded coconut, chopped pecans, vanilla extract, a pinch of salt and the honey or maple syrup.

Add chocolate: Add the melted chocolate to the mixture in the bowl and mix well until it forms a sticky mass.

Form balls: Use your hands to take small portions of the mixture and form them into balls. You can also roll the extra balls in some shredded coconut if you want to make them decorative.

Chill: Place the praline cookies on a baking sheet or tray lined with parchment paper and place in the refrigerator for at least 1-2 hours to set.

Enjoy: The coconut pecan praline cookies are ready after the chilling time and can be enjoyed!

Tips:
For an even more intense coconut flavor, you can also use toasted shredded coconut.
If you like it a little sweeter, you can adjust the honey or maple syrup to taste.
You can also use other nuts like walnuts or almonds if you want.
