1. Preheat the oven to 425°F.
2. Gently cut open each chicken breast without separating the halves. Insert two pieces of mozzarella cheese into each breast. Season with salt and pepper. Seal the chicken breasts.
3. Warm up some olive oil in an oven-safe skillet over medium-high heat. Brown the chicken breasts until they achieve a golden color, which usually takes around 3 minutes per side.
4. Move the skillet to the oven and bake for 18-20 minutes.
5. While the chicken is baking, melt the butter in a saucepan over medium heat. Add the minced garlic and cook for approximately 30 seconds until it releases its aroma. Stir in the flour and cook for 1 minute.
6. Slowly pour the chicken broth into the saucepan while whisking constantly until the mixture becomes smooth. Then, add the heavy cream while continuing to stir until it becomes bubbly and thickened, usually taking about 3 minutes.
7. Incorporate the spinach and parmesan cheese, and cook for an additional 2 minutes or until the spinach wilts.
8. Take the chicken out of the oven and place it in the saucepan, allowing them to simmer together for approximately 1 minute.
9. Serve!
