1. Cut the beef into same-size small cubes. Season the beef cubes with salt, turmeric, chilli powder, garam masala, ginger, and cooking oil. Mix it well and marinate for 15 minutes.
2. Heat the pan to medium heat and add oil. Once the oil is hot, add cumin seeds, cinnamon, and bay leaves. Let them sizzle for a few seconds.
3. Next, add onions and cook until translucent. Then add the grated garlic and sauté for a few seconds until light brown. Then add the tomatoes and cook until the tomatoes are soft.
4. Add beef and ground spices ( chilli, turmeric, coriander powder, garam masala ). Combine everything well and cook for 1-2 minutes. Then add water and salt to taste.
5. Stir everything well. Bring the heat to low, close the lid and simmer for 1 hour or until the beef is tender. ( Check occasionally and add more water if necessary. ) Make a taste test and add more salt or spices if needed.
6. Once the beef is tender, turn off the heat and add coriander. Transfer to a serving plate and garnish with coriander and serve with plain basmati rice, naan, or chapati.
