Healthy Stuffed Pepper Soup:

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add chopped onion and garlic and sauté until fragrant and translucent, 2-3 minutes.

Add ground turkey or beef to pot and cook until browned, breaking it up with a spoon. If using beef, be sure to drain off any excess fat.

Stir in diced bell pepper and cook for another 3-4 minutes until softened.

Add diced tomatoes (with juice), tomato sauce, low-sodium chicken or vegetable broth, Italian seasoning, dried basil, dried oregano, smoked paprika, salt, and pepper to pot. Stir to combine.

If you want to add cauliflower rice for more nutrients and texture, add it to pot now.
